Homemade Snacks

The past few weeks  I’ve been trying recipes for homemade snacks.  Not only are these (generally) healthier than their store-bought counterparts, it usually costs less to make them at home.  I think they taste better, too.

The first recipe we tried was Smitten Kitchen’s granola bars.  They are delicious.  My turned out a bit chewier than hers appear to be but that’s fine by us.  I know this is one we’ll make over and over.

The second recipe is MaryBeth’s peanut butter power bars.  These, too, are so good.  In fact, the first time I made them.  When I asked Jeff what he thought his replied, “they’re so good, they must be really bad for me.”  Not so much.

I also made Amy’s graham crackers.  Actually, I’ve made them three times already.  This has already become a go-to around our house.

Check them out and stock your freezers for summer.

Daydreaming

Today, I find myself daydreaming.  I’m dreaming about things near and far.

this weekend: we get to spend this weekend with wonderful, old friends.  Friday we’ll be with the Krugers.  Jeff and Mike have know each other since high school.  On Sunday, we’ll be with one of my best friends from high school, Trista, and her family.  I can’t express how much I’m looking forward to just hanging out with people who have known us for so long.  It’s like going home.

this summer: The children have already declared this summer the best ever and we’re still four weeks from it even starting.  Time spent, camping with friends, in the garden, in the water, and just doing whatever with little regard to schedule is sounding so good right now.  Mostly, though, we’re all anticipating an extended trip home to Washington.  We haven’t all been back in two years and we’re so excited to be with family and friends.  Camping at the beach is also high on the list.

five years from now: Both Jeff and I have been dreaming of our home once he retires from the military.  Being back in the NW near family, living on acreage, being able to have a huge garden, and maybe even raise chickens and/or cattle are all on our wish list.  Time flies and it will be here before we know it.

But for now, I’m daydreaming of getting outside with the kids, soaking up the sun and cleaning up the backyard.

Daydreaming


Today, I find myself daydreaming.  I'm dreaming about things near and far.

I’m popping in for a quick “hello.”  All’s well, crazy busy but well.

I vaguely remember this time of year being busy when I was in school and it’s true once again now that we have school aged kids.  Yikes, our calendar is full.  When we don’t have a full calendar, we’re getting outside.  There’s work in the garden, exploration and simple, wonderful play.  (The swing is still a huge hit!)

On top of all of that, it’s “National Turn Off TV” week.  I watch very little TV so I’m limiting, but not cutting out entirely, my computer time.

Thus, there isn’t a lot of blogging or photo uploading go on.

And that’s ok.    Back soon!
